Kurkuri Bhindi (Super Crispy Okra)

Bhindi (okra) plays a significant part in the Indian cuisine and is one vegetable which we all love and is cooked quite often in my kitchen. In Hindi, Kurkure means Crispy and Bhindi is okraKurkure bhindi is a fried dish made using okra. 

I have always been a big fan of Kurkure Bhindi. But given that it is deep fried, I have been skeptical to make it frequently. Recently I tried the air fry version and my family absolutely loved it. The Air fryer version is even better than the fried version and is totally guilt free, delicious and super easy to make. 

Note: Slender okras work best for Kurkure bhindi

  • Bhindi/Okra/Ladyfinger- 250 grams 
  • Gram flour- 2 tbsp 
  • Salt- 1 tsp (or to taste) 
  • Red Chili Powder- 1tsp 
  • Coriander Powder- 1tsp 
  • Cumin Powder- 1/2 tsp 
  • Amchur Powder- 1/2 tsp(mango powder) 
  • Chat Masala – 1 tsp 
  • Oil – 2 tbsp 

Ingredients for Garnishing

  • Chopped onions 
  • Chopped tomatoes 
  • Chopped green chilies 
  • Chopped cilantro 
  • Pomegranate pearls 
  • 1 tbsp chat masala 


  1. Wash the bhindi under running water and let it dry for some time.  
  2. Trim the head and the tail and slit the bhindi vertically in four pieces.  
  3. You need to ensure that the bhindi (okra) is absolutely dry before you mix it with the spices. 
  4. Sprinkle gram flour, salt, red chili powder, coriander powder, cumin powder, mango powder, chat masala and oil over it.  
  5. Mix it well such that all the spices and gram flour sticks to the bhindi. 
  6. Preheat the electric fryer at 2000F and place the okra in the fryer and cook for 10-15 minutes in total.  
  7. Take the air fryer basket out and flip the bhindi pieces every 5 minutes so that the okra fries evenly. 
  8. “Kurkure Bhindi” is ready.  
  9. Garnish it with the above ingredients mentioned. Sprinkle more chat masala if needed. It’s a side dish which goes perfectly with hot chapati and dal!!
