Low Carb Tortilla Pizza

The easiest way to whip up a personal size pizza without rolling any dough -Tortilla Pizza that tastes like crispy flat bread. You can create different variations in topping and can be served as an appetizer or as a complete meal. I make this often at home for my family and it always goes really fast.  

The one below is the classic way I usually prepare it with just 4 toppings (onions, bell peppers, corn and jalapeño). 

If you are a person who is health conscious but still a pizza lover, here is a recipe for you that makes it healthier and easier than ever. You can use any flour tortillas, but I used the “Carb Savvy wheat Tortilla from Trader Joe’s”. 

A great way to stick to your healthy routine without feeling deprived or restricted. They are the best as they are low in Carbs, low in calories, yet very delicious.

Ingredients

  • 6-8 carb savvy wheat tortillas (Trader Joe’s) 
  • 2 cups grated mozzarella cheese 
  • 3 cups pizza Sauce or marinara Sauce 
  • 2 medium red onions sliced 
  • 2 cups frozen corn 
  • 1 cup green bell pepper sliced 
  • 3-4 Jalapeno sliced 
  • tbsps oregano 
  • tbsps red crushed pepper

Directions

  1. Heat the pan. 
  2. Place tortilla and brush with olive oil. 
  3. Roast on both sides till golden brown. 
  4. Remove tortilla from the pan and spread tomato sauce on top. 
  5. Arrange sliced onions, green bell pepper, frozen corn and jalapeño slices over tomato sauce. 
  6. Top it up with mozzarella cheese.  
  7. Sprinkle oregano over cheese. 
  8. Bake in the preheated oven until the cheese is melted and the piazza is golden and bubbly.  
  9. Garnish it with red crushed pepper. 
  10. Serve hot
